THE RECIPE Although a cookie-crumb pie crust is not a true dough, we can’t talk about pies without mentioning it. Simply a mixture of pulverized cookies, butter, sugar, and salt, it’s easy to make, popular, and, best of all, delicious. You can use store-bought graham crackers or any dry biscuit-style cookie ground finely. Here are two versions made using Sweetcrust Dough, the same dough used for many sweet tarts. This “dough” can be used as the base
