Method

Making the Roux

  1. Mix flours, sugar, and salt in a small bowl.
  2. Heat water and butter in a medium saucepan over medium-high heat until butter is completely melted. Increase heat and bring to a boil.
  3. Reduce heat to medium. Add flour mixture while stirring with a wooden spoon. Stir until mixture comes together into a ball.
