Combine flours, salt, butter, and water in a large bowl. Knead mixture, either with your hands or with an electric stand mixer fitted with a dough hook running on low speed, just until dough forms. Take care not to overmix. Shape dough with your hands into a rough 4-inch square. Wrap tightly in parchment paper and let stand at room temperature.
