THE RECIPE When I visited Paris, every pastry shop was selling a galette des rois (king cake), an edible celebration of Epiphany—nothing like the king cake eaten in the States. I ordered one within an hour of stepping off the plane. As soon as I tasted the flaky pastry and chocolate almond filling, I knew I had to make it myself.
