Duck’s eggs are becoming more available in supermarkets these days, but if you are having problems you could always switch them for hen’s eggs instead.


  • 80 g butter, softened
  • 120-150 g wild mushrooms, cleaned and cut into bite-sized chunks

Preheat the oven to 180°C/gas mark 4. Heat half the butter in a pan, add the mushrooms and cook gently for 3-4 minutes, covered
