Method
Everyone, and especially Spanish people, loves croquetas. Everyone, including Spanish people, loves sandwiches. That’s how I came up with this one.
The Spaniard was one of the opening three. A perfect illustration of how easily meat can be replaced by the right delicious veggie thing. In this case deep fried, breadcrumbed, nutmeggy béchamel rammed with sweet, sweet onions.
