It’s a sad day when your takeaway isn’t graced by an overflowing styrofoam cup of soothing raita, but it does happen. So make some. So simple, so delicious. The cooling wonderful friend of a scorching hot curry. And it’s such a wonderful thing in a sandwich.

Ingredients

  • ½ cucumber
  • ¼ tsp salt
  • 100 g Greek yoghurt

Method

Take the half a cucumber and cut it in half, then again and then again. You have eight pieces. Remove the seeds with your knife or a spoon and discard them. Then slice all the pieces into the thinnest tiniest slices you can. Put them in a bowl and stir in the salt.
