Take your heaviest bottomed saucepan and place it over a medium heat. Add the oil and allow it to get hot before putting in the onion, garlic, brown sugar and salt. Cook this for 8—10 minutes stirring pretty regularly. The sugar will make this go nice and dark, and the onions will sweat and caramelise too. This is good.
