Ingredients: 2 tbsps rapeseed oil; 1 red onion, burnt whole, then quartered with the skin on; Water; 4 limes, halved, open face burnt in a dry, incredibly hot frying pan; 100 ml red wine vinegar; 2 kg braising steak cut into large chunks; 5 bay leaves; 1 tbsp sea salt; A bunch of coriander, stalks removed and finely chopped, leaves roughly chopped; 2 jars chipotle adobo or chipotle paste (you can find it in some supermarkets, online might be easier); 1 whole garlic bulb, halved and burnt over an open flame (Read for burning skills); 5 cloves
