Ingredients: 4 tbsps plain flour; 4 tsps leftover tomato sauce, or a good passata; 400 g cooked and cooled risotto, preferably leftover — what sort of savage would make risotto just to make arancini?; 1 ball of buffalo mozzarella; 2 medium eggs, beaten; 2 litres rapeseed oil; 100 g breadcrumbs (like Ned Halley’s)
