Start by warming the milk and water in a pan until just hotter than body temperature. Use your finger to tell. Add the yeast and leave to one side for 15 minutes to bloom and froth. Meanwhile, measure out your flours in a large bowl and add the salt. Slowly pour in the yeasty milk and water, whisking vigorously until you have a smooth batter.
