  • 250 ml double cream
  • 250 ml whole milk
  • 2 star anise<

Method

Put the cream, milk and star anise into a saucepan and bring to the boil. Immediately turn off the heat and set aside to infuse and cool completely. Whisk the eggs and sugar together in a large bowl, then add the salt. Gradually pour in the cream and milk and whisk until smooth. Leave the star anise in the mixture, cover the bowl with cling film and chill overnight to allow the flavours to infu
