Serve these sweet breakfast scones as is or with a smear of jam. The variations are endless: Substitute dried currants or cranberries, or use fresh strawberries or raspberries with plenty of lemon zest in place of the blueberries. In this recipe, coconut oil or coconut butter replaces butter or shortening, so you want it to be semisolid or solid. If yours is soft, measure it out, then freeze for about 10 minutes before using.
