Chickpea flour (garbanzo bean or gram flour) is a favorite breakfast ingredient, as it makes a good substitute for eggs. You can whip up savory pancakes or flatbread with it, and we’re quite partial to this quiche because you can make it ahead of time—and it travels well, too! Customize it as you would a frittata. If you’re adding “wet” veggies such as onions, peppers, or mushrooms, sauté them first so you don’t end up with soggy quiches.
