Roasted garlic lends a creaminess to this dressing with absolutely no oil (or even any whole food fat, for that matter!). It pairs well with root vegetables, hearty raw greens like kale, and roasted veggies. It also works well as a marinade.

  • 1 head roasted garlic, cloves removed from skins (see Tip)
