You might have tried a carrot halwa pudding before, but what about pumpkin? This has the autumnal flavours of pumpkin spice latte and is completely vegan. It can easily be made ahead of time. However, it will thicken as it cools, so when reheating, add some water to loosen. Sweet and aromatic, it’s like a comforting hug in dessert form.

Ingredients

  • 500 g/1 lb 2 oz pumpkin (peeled and deseeded weight)

  1. Grate the pumpkin coarsely using a box grater.
