Valencia is the great rice region of Spain, and the Valencian Paella is a justly famous rice dish. The paella includes a mixture of seafood, chicken, pork and maybe sausages. Arroz a la marinera is the name given to a paella-type dish in which the rice is accompanied by seafood alone. You will need:

Method

Heat the olive oil and add the pieces of angler-fish, squid and cuttlefish. When these are golden add the chopped onion and tomato and paprika. Continue to fry all this for a few minutes, taking care not to burn the paprika.
