There is a saying in Valencia: ‘De la mar el mero, y del monte el cordero’, which means that just as lamb is the best product of the mountains so the mérou is the finest fare to be had from the sea. The people of Almería also appreciate the mérou, and here is one attractive recipe for it which they have evolved.


The fish itself is easily prepared. Buy 6 steaks of mérou and either grill or fry them. The sauce is also easy, and only requires butter and flour,
