Method

Chanquetes are the tiny transparent gobies. They are (or were) eaten whole – fried in batter, golden brown with the eyes standing out as tiny black dots, and served with lemon. This used to be a popular dish at Málaga, before regulations now in force prohibited the fishery for them.
