Spaniards are fond of angler-fish and inventive in cooking and presenting it. Rather than give a single detailed recipe, I offer a series of suggestions and one warning.


To take advantage of the resemblance between the flesh of angler-fish and of lobster, proceed as follows. Cut thick uniform steaks of angler-fish, salt them and bake them in the oven just as they are for about 20 minutes (depending on the thickness of the steaks).
