This dish, as described by Sra Vidal in her book on Mallorcan cookery, is a combination of fantasy and patriotism, since the dominant colours are those of the Spanish flag. By a happy coincidence they are also those of the Catalan flag, so that the dish, served in Spain, is politically ambiguous. It is, however, an excellent cold dish for any buffet table; and the garnishings can be varied to suit the colour preferences or express the allegiance of whoever makes it.
