Cut open the oursins and extract from each the quintet of corals. Collect these together. Break the eggs into a bowl, add 2 tablespoonfuls of water and salt and pepper and mix all this up roughly with a fork (or beat it if you prefer to do so) and add the corals to the mixture. Meanwhile heat butter
