Cavanna (in Doni di Nettuno) gives the following curious instructions for cooking fillets of sole, and explains also how to prepare bogus ones (by a technique which even the most unscrupulous are unlikely to follow nowadays when the price of oysters is so high and frozen fillets of flatfish are available everywhere). I have used the recipe, and found it good; but have not even attempted the deception.
