Method

This is an excellent dish, popular in many parts of Italy and found with interesting regional variations. The version which I offer is from Naples, where Assunta Viscardi, for many years the cook at H M Consulate-General, gave me the following instructions.

Clean and prepare the squid as usual; chop up the head and tentacles. Heat
