Keremida is the name for the old Turkish type of roof tile. This, if made with closed ends, serves as a cooking vessel. The wooden support brings it from fire to table.

Ingredients

  • 5 fish weighing 1 kg ( lb) or 5 fish steaks

Method

Clean the fish and sprinkle them with salt. Heat half the oil in a pan and fry the onion lightly in it. Add the tomato, parsley, ground pepper and a little salt. Simmer over a low heat until all is soft.

Meanwhile you have heated five keremidi. Oil them lightly and add the sauce, putting an equal amount in each. Lay the fish on top, sprinkle the remaining oil over them, and bake the dis
