Vincent Vella, who came from Malta, had for long been Vice-Consul at the British Embassy in Tunis when I worked there in the early 1960s. He used to rear canaries in his flat in the Embassy building; and the reader should imagine this recipe of his being executed to the accompaniment of chirping from a score of these birds in their beautiful white and Tunisian-blue wire cages from Sidi-bou-Said.
