This recipe provides delicious titbits to serve with drinks, or may serve as a main course if the fried fish sticks are cooked briefly in a tomato sauce and served with rice. It comes from the repertoire of the Lagnado family in Cairo.

Ingredients

  • ½ kg (1 lb 2 oz) raw minced white fish
  • 1 whole

Method

Mix together all the ingredients except the last two. The mixture should be firm and easy to roll. If it is too soft, add some more breadcrumbs to it. Having got the consistency right, roll out the mixture into fingers about 5 cm (2
