This recipe, a favourite of the people of Alexandria, differs from the corresponding Lebanese dishes, for example in the suggestion that a yoghourt salad be served – the Lebanese believe on the contrary that fish and yoghourt are never to be combined.* Sea bass is of course more expensive than eel, and it is eel which is used in the popular version of this dish.
