Method

The Sephardic Jewish community was originally centred in Spain, but was dispersed in the fifteenth century as a result of the Inquisition. Sephardic Jews were scattered all round the Mediterranean, and elsewhere, but kept their traditional culture and cuisine. Here is a dish which belongs to them and has every claim to be Mediterranean, although it does not belong to any one Mediterranean count
