This is a basic recipe and my favorite kookoo, as few vegetables can rival the allure of eggplant. If you like a smoky taste, rub the eggplants with olive oil and char under the broiler until their skins blacken and crack. Then lower the heat, move the eggplants to the middle of the oven, and continue baking until they are cooked through. Instead of baking a round kookoo you can make it in four or six ramekins, or make bite-size “cakes” in small muffin tins if you plan to serv
