Pesce spada schibbeci from Sicily is a swordfish seviche that can be served as an antipasto. The word seviche comes from the Spanish escabeche, also called schebbeci in Sicily, a word that means “marinated fish.” This preparation is one I made nearly every August and September when I lived in Massachusetts and swordfish was in season. It also works well with shark.
