These are fleshier and softer than sun-dried tomatoes and are easy to make.

Ingredients

  • 5 large plum tomatoes, preferably Roma
  • ½ teaspoon sugar
  • Salt and freshly ground black pepper</

Method

  1. Preheat the oven to 275°F.
  2. Halve the tomatoes horizontally. Arrange them in an oiled shallow rimmed baking dish just large enough to hold them all in a single layer. Dust with the sugar and sprinkle lightly with salt and pepper. Drizzle
