Matloua is one of my favorite leavened Moroccan flat breads—a tender, spongy round that goes perfectly with tagines, whether eaten Moroccan style (using the bread to grasp food from a communal dish) or simply used to mop up sauce from a plate. These rounds are also wonderful simply smeared with butter or smen and consumed along with some wildflower honey and a glass of mint tea.
