Soak the beans overnight in cold water. Drain and cook in boiling unsalted water for 30 minutes, then drain. In a large heavy saucepan, melt the fat and quickly fry the sausages until browned all over. Take them out of the pan, put in the onion and cook for 5 minutes until golden.
