St. George’s are my favourite mushrooms, so named as they come into season around St. George’s day. Sadly, they are only in season until the end of May. For me, they’re a true sign that spring is here, with their creamy firm texture and very distinct earthy smell and wonderful taste. You can use girolle, ceps or regular button mushrooms if you can’t get hold of St. George’s.
