These sugar cakes are quite deceptive as they’re technically more like shortbread biscuits. The original recipe dates back 200 years but only recently came to light in Beverley when the council archives were moved to a new building in 2007 and the recipe fell out of an old accounts ledger. Before then, nobody had ever heard of this type of cake.
After recreating the original recipe, I realised that they were too strong for today’s tastes, containing a massive quantity of ground cloves and mace, so I adapted the ingredients and created a much more palatable version. Enjoy!
