Ginger-burnt Cream with Sugar Cakes

These sugar cakes are quite deceptive as they’re technically more like shortbread biscuits. The original recipe dates back 200 years but only recently came to light in Beverley when the council archives were moved to a new building in 2007 and the recipe fell out of an old accounts ledger.
