Barbacoa is derived from the word for “barbecue,” and this is the easiest way to make beef tongue barbacoa in your home. The texture of the meat is soft and sort of creamy if well cooked, to the point that it almost melts in your mouth. The leftovers (if any) are great for making lots of things, including tortas and flautas.

Ingredients

  • 1 beef tongue (2 to 3 pounds/900 to 1.4 kg)
  • ¼ medium white onion</

Method

  1. Rinse the beef tongue with water and place it in a slow cooker. Add the onion, garlic, bay leaf, and salt, and enough water to cover the meat. Cover the pot and set it on low for 8 hours. Cook until tender. If after 8 hours the meat is not tender enough to shred, cook it a little longer.
  2. Remove the beef tongue from the pot and place it on a large dish. Using a
