Shredded Beef in Tomato Sauce

Ropa vieja, which means “old clothes” in Spanish, is a dish that is found throughout many Latin American countries, including Mexico. This stew consists of shredded beef cooked with vegetables in a tomato-based broth. Whenever I make Caldo de Res, I like to cook extra meat so I can make this dish later in the week.
