Tamales de piña are one of the most popular sweet tamales in Mexico, after Tamales Dulces. These tamales are often made with only pineapple in the dough, but for this recipe I added raisins, shredded coconut, and chopped pecans. They make an excellent dessert, served with a cup of coffee. If you like, you can top them with whipped cream or drizzle them with condensed milk.
