This crunchy salad is one of my favourite side dishes. In China it is served as an appetizer to snack on with a drink or to go with kebabs. It’s also the perfect accompaniment to a piping hot stir-fry and rice. I always make enough to roll up in tortilla wraps with chicken for lunch the next day.

Ingredients

  • 6 spring onions, finely sliced on a diagonal
  • 1 red pepper, deseeded and finely sliced
  • 1 green pepper, deseeded and finely sl

Method

  1. Whisk the dressing ingredients together in a large bowl.
  2. Add the spring onions, red and green peppers, baby leeks, coriander and red chilli, then mix everything together until well combined. Scatter over additional sesame seeds and serve.
