This crunchy salad is one of my favourite side dishes. In China it is served as an appetizer to snack on with a drink or to go with kebabs. It’s also the perfect accompaniment to a piping hot stir-fry and rice. I always make enough to roll up in tortilla wraps with chicken for lunch the next day.

6 spring onions, finely sliced on a diagonal
1 red pepper, deseeded and finely sliced
1 green pepper, deseeded and finely sl

Method

Whisk the dressing ingredients together in a large bowl.
Add the spring onions, red and green peppers, baby leeks, coriander and red chilli, then mix everything together until well combined. Scatter over additional sesame seeds and serve.
