Grilled Haddock, Apple and Coriander Salad with a Lemongrass Dressing

  • juice of ½ lemon
  • 4 green apples, peeled and cut into slices
  • 4 haddock fillets, about

Method

  1. Pour the lemon juice over the apple slices to stop them discolouring and set aside.
  2. To prepare the dressing, remove the really tough outer leaves from the lemongrass and cut off the ends of the stalks. Starting at the fatter end, roughly slice each lemongrass stalk into rings. You should see a purple band in the rings. Stop slicing when there are no more purple
