Golden Temple Lamb Curry

This lamb curry is inspired by the wonderful food I ate in Amritsar in Northwest India. The city is home to the beautiful Golden Temple, the holiest place in the world for Sikhs, and one of the most incredible places I have ever been to. The best food I ate in India was always in someone’s house, and in Amritsar I was lucky enough to spend most of my time with my lovely friend Nitya’s family, who made sure I never went hungry.
