This is another wonderfully tasty dish from South India. Frying the fish in a banana leaf adds a really lovely smoky flavour and keeps in all of the delicious juices. You can find banana leaves online or in specialist shops, but if you don’t want to go to the trouble, use baking parchment instead – the recipe will work just as well. You can make everything well in advance and just cook the parcels before serving.
