  • 55 g/2 oz/ cup unsalted peanuts

Method

  1. Heat a frying pan over a medium heat. Add the peanuts and gently toast, shaking the pan occasionally, for 2–3 minutes, or until the peanuts are a beautiful golden brown. Transfer the nuts to a plate to cool, then roughly chop.
  2. Preheat the grill to medium. With a sharp knife, make a few diagonal slashes on each side of the sea bass, then brush each fish lightly
