What I love about this delicious curry is there are only two, highly complementary spices involved – turmeric and lemongrass. The turmeric gives the curry a sunshine-yellow colour and a deep, earthy taste, while the lemongrass freshens up the sauce with its citrus fragrance. The classic South-East Asian salty and sour flavours, which come from the fish sauce and lime juice, cut through the rich coconut and bring the dish to life. This is a perfect example of how you can create an exotic cur
