  • 55 g/2 oz/½ cup flaked almonds

Method

  1. Heat a large frying pan over a medium heat. Add the cashew nuts and gently toast, shaking the pan constantly, for 1–2 minutes. Add the flaked almonds and continue to shake the pan for a further 1–2 minutes, or until both the cashew nuts and almonds start turning golden. Transfer the nuts to a plate and set aside.
  2. Put the cardamom pods on a chopping board and, u
