Mole is an exquisite Mexican sauce with a complex flavour. It requires lots of ingredients and time, but I have created an express version that has all the depth of flavour of a traditional mole, without the fuss. Bright yellow polenta is just right to soak up all the intense flavours and is reminiscent of the corn used in Mexican cooking. My fennel salad, with crunchy radishes and a tart dressing, adds vibrancy and balances the flavours of the dish.
