  • 4 lesser calamint sprigs
  • 4 borage leaves
  • 1 bunch of baby chard leaves

Method

Cut the calamint, borage and chard into strips and the chives into rounds. Slice the onion as thinly as possible.

Sauté the calamint, borage, chard, chives and onion in oil in a frying pan for a few minutes.

Beat the eggs in a bowl with the Grana, salt and pepper, then pour into the frying pan with the greens.

Holding the handle of the pan, move it with small jerks so th
