A one-pan delight, this hearty shakshuka is based on a classic Middle Eastern dish, and it’s one that continues to come up in my weekend brunches. If you’re not into dipping bread, then look away now.

Shake yourself into this shuka.

Ingredients

  • 1 white onion
  • 2 jarred red peppers, drained
  • 3 garlic cloves

Method

  1. Dice up the onion, red peppers and 2 of the garlic cloves, then whack a large frying pan on a medium heat with a little bit of olive oil. Chuck the onion, peppers and garlic into the pan and add a pinch of salt. Fry for 3-5 minutes until completely softened.
  2. While that’s cooking, in a food processor (yes, it’s back) blitz the tofu, tahini, half the lemon juice
