In my version of this red-sauce restaurant staple, I use garlic oil so you get that intense flavor without eating a huge mouthful of pure garlic.

Ingredients

  1. ¼ cup (60 milliliters) extra-virgin olive oil
  2. 6 cloves garlic

Method

  1. Preheat the oven to 425°F (220°C).
  2. Place the oil in a small bowl. Using a garlic press, crush all the cloves directly into the oil (so the oil catches all the garlic juice). Stir and let stand for at least 15 minutes.
